Brown Rice Sources of Vitamins and Minerals

Did you know that once brown rice has been milled and polished that 67% of Vitamin B3, 80% of vitamin B1, 90% of vitamin B6, half of manganese and phosphorus; 60% of iron, all dietary fiber and essential fatty acids are destroyed?  Fully milled and polished white rice must be enriched with B1, B3, and iron, according to the USDA law. 

These nutrients that are added back into the processed rice are not the same as the un-milled and unpolished rice.  Approximate eleven nutrients are not replaced, even in the enriched rice.  Brown rice is an excellent source of manganese, and a good source of magnesium and selenium
