 Spinach is a nutrient dense food, which is high in vitamins, minerals, and phytonutrients.  It is an excellent source of vitamin K, A, B2, B6, C, E, calcium, iron, manganese, potassium, zinc, copper, dietary fiber, and omega-3 fatty acids.  Spinach is a heart healthy food, with potent antioxidants A and C, which reduce free radicals in the body; prevent oxidizing of cholesterol; protect the cells of the colon; and has anti-inflammatory properties.  It is also a good source for a healthy cardiovascular system. The mineral magnesium is said to help lower high blood pressure. The carotenoid in Spinach helps protect against eye diseases such as cataracts and macular degeneration.  It should be eaten with olive oil for absorption.
Nutrient Dense Foods:  High in Vitamins, Minerals, and Phytonutrients

Some people may be allergic to spinach, and should not eat it.  The oxalates in spinach may interfere with the absorption of calcium and cause crystallizing.  People with kidney or gallbladder problems should be careful in eating spinach.  It may also interfere with proper thyroid gland functioning, cooking may reduce the goitrogenic compounds. The purine in spinach may affect people with gout.  Just remember any leafy food may have high pesticide content; organic is better... Says Ms Bettie.

Romaine A Heart Healthy-Cleansing Food

                           Romaine:  A Heart Healthy Lettuce  "DAY 23, 2011"
Many people only buy iceberg lettuce to make salads, but we are doing ourselves a disfavor, because iceberg lettuce carries no nutritional value.  Today, we would like to examine Romaine lettuce and its quality and benefits to health. 
First, Romaine lettuce is heart healthy, because of its fiber content.  It cleansing effect prevents cholesterol from adhering to the inside of the arteries.  Romaine is low in calories and has a high water content along with it nutrients of vitamin C, A, K, chromium, manganese and folate; a water soluble B vitamin.
All lettuce should be soaked in a vegetable wash or apple cider vinegar to remove microscopic bugs and parasites.  It should be soaked about 15 minutes, rinse very good before eating.
